An Edit mode on a stage's checklist that layers per-task overrides on top of the default list: rename an item, hide one, or add a custom one. Overrides are keyed by project + task + checkpoint and merged at render time.

- 1resolveMilestones merges the default list (project snapshot, else the platform catalogue) with the override rows
- 2Custom entries sort last unless given an explicit order; hidden ones drop out of the list
- 3Each override is a single upsert row; deleting an override restores the default or removes a custom entry
- 4The Edit control is replaced by the 'Locked' notice once the project is frozen
No two builds of the same type are quite the same job, so the checklist has to be adjustable somewhere — and after the build starts the honest answer is 'not applicable', not a quiet edit that changes what was agreed. All customisation happens before the lock. The Start Project screen originally dropped those edits on the floor and created every job on the template defaults, so the only way to adjust anything was to open each stage afterwards and do it all again.
